All of the current recipes are handwritten from an event (an afternoon of Tea and Goodies) that used to take place at the Clatsop County Fairgrounds formally located in downtown Astoria. These are traditional recipes that may be found in recipe holders all over Astoria.

Svenska Pepperkoker

  • 1 ½ Cup Maple Syrup
  • 1 ¼ Cup Sugar
  • ½ Pound Butter (must be real butter)
  • 1 ½ Teaspoon Cinnamon
  • 1 ½ Teaspoon Cloves
  • 1 ½ Teaspoon Ginger
  • ½ Teaspoon White Pepper
  • ½ Teaspoon Nutmeg
  • 1 ½ Soda
  • ½ Cup Cream
  • 5 Cups Flour

Mix in usual manner. Raise dough overnight. Roll very thin. Cut into desired shapes. Bake 8 minutes at 375 degrees.

 

Norwegian Krumkake

  • 1-Cup Sugar
  • 1 Cup Butter – melted
  • 3 Eggs
  • 1 tsp Vanilla
  • 1 ½ Cup Flour

 
Beat eggs well, add remaining ingredients. Blend well. Spread as thin as possible on Krumkake iron (available at most import stores) and bake until golden brown. Roll on cone while warm to shape.
 

Riisipuuro

  • 1 Cup uncooked white rice
  • 6 Cups milk
  • ½ Teaspoon salt
  • 2 Teaspoons sugar
  • 1 Cup heavy cream

 

 
Combine the rice, milk, salt, and sugar covered in the top of a double boiler cooking over water 2 hours stirring occasionally until rice is creamy and milk is absorbed. Serves about 8.

Optional - Cool 30 Minutes and fold in whipped cream and sprinkle with cinnamon sugar. Can be served with Milk or Cream a little butter or Fruit soup.

 

Pickled Salt Salmon

Place layer of sliced onions in large crock. Follow with layer of salmon not more than ½ inch thick. Sprinkle with pickling spice and continue to layer until fish is used. Add cider vinegar (2/3 vinegar and 1/3 water) to cover fish. Cover and let stand in refrigerator at least 2 hours. The brine may be boiled and cooled before adding to the fish. The fish should be salted seven people days before using.

 

Lefse

  • Norwegian Flat Bread
  • 1 Cup Sugar
  • 2 Cup canned milk
  • 1/3 Cup lemon juice
  • 1 Teaspoon Soda
  • ½ tsp Salt

Put milk, sugar and salt in bowl – add lemon juice. Sift soda with about 4 cups flour to make dough that rolls out easily. Bake on iron both sides. When ready to use hold each lefse under warm that water then put between cloths until soft 10-15 minutes. Butter and sprinkle with sugar and cinnamon. Fold and cut into 3 pieces.

 

Scandinavian Potato Sausage

  • 2 ½ lb pork butt – ground
  • ½ lb ground beef
  • 6 raw potatoes
  • 1 cup milk scalded
  • 1 medium onion
  • 1 teaspoon pepper
  • 3 tablespoons salt
  • ¾ teaspoon allspice
  • 2 tsp ginger
  • 1 lb casings

Grind potatoes and onions. Mix with ground meat. Add spices, salt and milk. Mix and put into casings. Allow room for expansion so casings don’t break in cooking. Boil 1 hour prick once or twice during cooking.
